I ...These were delicious and my toddler loved them! I usually make the toddler muffin recipe from allrecipes.com, but I Was out of some ingredients and I just needed a change! For me, the recipe made 1 pan of regular muffins, 1 pan of mini muffins, both in liners. They are lightly sweet, not super moist, but moist enough. I substituted pumpkin pie spice for the nutmeg. I also added 1 TBSP ground flax--would add more next time and maybe some shredded carrots and possibly some squash puree (I use a jar of baby food) since I like this in the other recipe. But it's not necessary to have the additional add-in's. :) Very good!
